Turkey-Mushroom Meatloaf

  • 1 1/4 lbs. lean ground turkey breast
  • 12 oz. mushrooms, finely minced
  • 1/3 cup shallots, finely minced
  • 1 large garlic clove, finely minced
  • 1 tbsp. canola oil
  • 1/2 cup plain breadcrumbs
  • 1 egg or 1 egg white
  • 1 tbsp. worchestershire sauce
  • 1 tbsp. gravy maker (i.e. Kitchen Bouquet)
  • 1 tbsp. dried marjoram
  • 2 tsp. dried thyme
  • 1 fresh seeded jalapeno pepper, minced (optional)
  • salt and pepper to taste
Saute the minced mushrooms, shallots, garlic and jalapeno (optional) in oil five minutes on medium heat until mushrooms have released liquid. In a large bowl, combine turkey, breadcrumbs, worchestershire sauce, gravy maker, cooked mushroom mixture, egg and herbs. Form into a loaf and place in an oiled loaf/baking pan. Bake at 350 degrees for about an hour.
Serves 4-6.
